Main Street Moments: Meet Natasha Versa of Biskit NV at the Food Hub
Downtown Athens continues to grow as a home for small businesses and entrepreneurs, and this week on Main Street Moments, we had the pleasure of sitting down with Natasha Versa, owner of Biscuit Envy—the very first restaurant to join the Food Hub, owned and operated by Main Street Athens.
Biscuit Envy has been part of the Food Hub for about four months, and Natasha recently took a short January break to refresh the menu and plan what’s next. When Biscuit Envy reopens at the end of January, customers can expect new offerings, expanded menu variety, and additional service hours—including exciting evening features.
What’s New at Biscuit Envy
Currently open Thursday through Saturday from 8 a.m. to 2 p.m., Biscuit Envy will soon introduce added evening hours and new menu options. From 11 a.m. to 2 p.m., guests will be able to enjoy meat-and-two-style offerings, while Friday nights will feature rotating specials like fish fries, desserts, and other comfort favorites.
Natasha also shared plans to offer discounted menu items for Tennessee Wesleyan University students and to introduce breakfast platters with even more variety.
A Full-Circle Moment for a Second-Generation Business
Biscuit Envy is a second-generation restaurant that originally launched in Cleveland in 2021. For Natasha, bringing the business to Athens is especially meaningful—about 20 years ago, her parents owned a restaurant just blocks away from the Food Hub.
“Being back in this community really means everything,” Natasha shared. “This feels like a full-circle moment.”
Taking on a restaurant business is no small task, and Natasha explained that it took time to step into the role herself. Ultimately, she knew it was the right path. “It’s our calling—to be out in the community, serving the community,” she said.
Why the Food Hub?
When asked why she chose the Food Hub instead of a traditional brick-and-mortar or food truck, the answer was simple: location, opportunity, and accessibility.
The Food Hub provides food entrepreneurs with a lower-risk way to start or grow their businesses by covering utilities, equipment, and overhead—allowing vendors to focus on building their dream. For Biscuit Envy, being downtown and part of Athens’ growing food scene made the decision easy.
Looking Ahead: Biscuit Envy Takeovers
One of the most exciting announcements from the episode was Natasha’s plan for Biscuit Envy Takeovers in 2026. These community pop-ups will bring Biscuit Envy directly to local businesses and organizations—sharing biscuits and gravy, the popular Marley cinnamon swirls, fried chicken, desserts, and more.
The goal? Letting the community know Biscuit Envy is here—and that they offer more than just biscuits. The business also provides full-service catering for breakfast, brunch, and special events.
